Glen's Enchiladas

Originates from Glen Brozovich, cousin Lisa's husband
Fry corn tortillas in oil to soften – if you are using corn tortillas. I always used flour tortillas.
Dip in red enchilada sauce.
Fill with a mixture of cooked ground beef, chopped onions, chopped walnuts, chopped green chilies, chopped black olives, salt & pepper.
Roll in baking dish. Top c̅ more sauce & grated cheddar and Monterey Jack cheese.
Bake @ 350° until sauce bubbles & cheese melts.
