Minestrone
- 2 T.Salad oil
- 1 med.Onion, chopped
- 6 c.Beef broth
- 2Potatoes, cubed
- 2 med.Carrots, sliced
- 1 c.Green beans, cut in 1'' slices
- 2 med.Zucchini, sliced
- 1/2Small head cabbage, chopped
- 1 can (28 oz)Whole tomatoes, coarsely chopped
- 1/2 tsp.Basil
- 1 tsp.Salt
- 1/4 tsp.Pepper
- 1 canKidney beans, drained (I sometimes add corn or other canned beans)
- 1/2 c.Grated Parmesan cheese
In a large saucepan, heat oil, add onions and saute 5 mins. Add broth, potatoes, and carrots. Over high heat, bring to boil. Reduce heat to low; cover & simmer 15 mins. Add green beans & remaining ingredients except kidney beans. (I also add red wine). Simmer 40 mins. Add kidney beans during last 5 mins. Serve with cheese.
