Minestrone

  • 2 T.
    Salad oil
  • 1 med.
    Onion, chopped
  • 6 c.
    Beef broth
  • 2
    Potatoes, cubed
  • 2 med.
    Carrots, sliced
  • 1 c.
    Green beans, cut in 1'' slices
  • 2 med.
    Zucchini, sliced
  • 1/2
    Small head cabbage, chopped
  • 1 can (28 oz)
    Whole tomatoes, coarsely chopped
  • 1/2 tsp.
    Basil
  • 1 tsp.
    Salt
  • 1/4 tsp.
    Pepper
  • 1 can
    Kidney beans, drained (I sometimes add corn or other canned beans)
  • 1/2 c.
    Grated Parmesan cheese

In a large saucepan, heat oil, add onions and saute 5 mins. Add broth, potatoes, and carrots. Over high heat, bring to boil. Reduce heat to low; cover & simmer 15 mins. Add green beans & remaining ingredients except kidney beans. (I also add red wine). Simmer 40 mins. Add kidney beans during last 5 mins. Serve with cheese.
