Spicy Baked Shrimp

I got this recipe from Julie Klewer from Tucson. She was married to one of the Peds Cardiologists.
  • 1/2 c.
    Olive oil
  • 2 T.
    Cajun seasoning
  • 2 T.
    Fresh lemon juice
  • 2 T.
    Chopped fresh parsley
  • 1 T.
    Honey
  • 1 T.
    Soy sauce
  • Pinch
    Red pepper
  • 1 lb.
    Uncooked large shrimp (oxymoron!), shelled & deveined
  • 2
    Tomatoes, chopped
  • Cooked pasta

Combine first 7 ingredients in 9 x 13 baking dish. Add shrimp & toss to coat. Refrigerate at least 1 hour.

Preheat oven to 450° (don't put cold glass dish in hot oven!). Bake, stirring occasionally, about 10 mins.

Serve over pasta with chopped tomatoes. Garnish with lemon wedges & parmesan cheese.
